200 grams Cauliflower Mushroom soak in the hot water
300 grams Pomelo peeled, take flesh, torn rough
18 pcs Tiger shrimp peeled, leaving tails, boiled
3 Kaffir / fragrant lime leaves slice finely
1 stalk Lemongrass Take the white part, slice finely
1 bunch Spring Onion slice finely
1 Red chili seeded and sliced finely
1 Red onion slice finely
DRESSING:
2 tbs. Lemon juice
1 tsp. Mustard
2 tbs. Honey
1 tsp. Olive oil
1/2 tsp. Salt & pepper to taste
1 tsp. Fish sauce
TOPPING:
1 bunch Pepper mint leaves trimmed
1 bunch Coriander leaves trimmed
Using a mortar and pestle, pounded garlic until well pulverised. Place garlic mixture in the salad bowl. Add lemon juice, honey, mustard, fish sauce, lemon grass, kaffir lime leaves and olive oil.
Place the mushroom, pomelo, red onion, and sauce in a bowl and stir well. Add tiger shrimp, spring onion and finely sliced chili tossed gently. Taste and if necessary add more honey, lemon juice. Put aside.
Serve on salad plate with garnish of pepper mint leaves and coriander leaves.
