25 pcs Long Green Bean sliced, finely
200 grams Prawn peeled
8 pcs Shallots
2 cloves Garlic
2 cm Turmeric
2 cm Ginger
2 cm Galangal
4 tbs. Vegetable oil
5 pcs Red Chilies seeded, sliced finely (optional)
2 pcs Salam leaves
1 stalk Lemon Grass crushed
1/2 tsp. Salt to taste
500 ml Medium thick coconut milk Mix 250 ml coconut cream with 250 ml water
250 ml Coconut cream
1 tsp. Tamarind juice
Blend shallot, garlic, turmeric, ginger, galangal together in a motar and pestle until turned into paste.
In frying pan place four tablespoons vegetable oil add the paste . Stir over a medium heat until the color turns golden. Add Salam leaves and lemon grass.
Add green bean,prawn and stir. pour the thin coconut milk and simmer for a few minutes until the green bean are tender. Add the coconut cream and tamarind juice.
Turn down the heat and simmer to reduce the sauce until it becomes thick.
