099e Balinese Chicken Stuffed (Ayam Betutu)



1,2 kg Whole Chicken Take out the inside, cut the head

100 grams Casava leaves Boiled, drain

3 tbs. Vegetable oil

2 sheets Banana leaves @ 50 cm. Used to wrap (can use alumunium foil)

10 pcs Red chilies

6 pcs Garlic

12 pcs Shallots

6 pcs Candle nut fried

1 tsb. Shrimp paste grilled

2 tsb. Coriander seeds

4 cm Galagal

3 cm Ginger

3 cm Kencur

3 cm Turmeric roasted

1/2 tsb. Nutmeg

1 tbs. Palm sugar

1,5 tsb. Salt

2 stalk Lemon grass use the white part, sliced

2 pcs Salam leaves

2 pcs Lime leaves


Blend coriander, nutmeg, chilies, garlic, shallots, ginger, galangal, tumeric, candlenuts, salt and sugar into a paste using a mortar and pestle or food processor. In a frying pan place three tablespoons vegetable oil and the paste. Add salam leaves, lime leaves and lemon grass. StirĀ over a medium heat until the color turns golden. Divided into two parts.

Stir one part seasoning with cassava leaves. Stuffed the cassava leaves mixture into the chicken. Rub surface of the chicken with remaining seasoning. Wrap the chicken in banana leaves. Steam the chicken for 45 minutes until cooked, remove from heat. Open the banana leaves package. Bake chicken in a hot oven temperature of 180 degrees for 20 minutes until lightly browned and cooked through. Remove and serve.
