093e Bananas in Coconut Sauce (Kolak Pisang)



6 pcs King banana Peel cut in 3 cm length

4 tbs. Palm sugar

250 ml Thick Coconut Milk

2 sheets Pandan leaves folding

5 cm Cinnamon stick

1/2 tsp. Salt to taste

6 pcs Jackfruit for garnish cut into 1 cm wide


Peel the bananas and each in 3 cm length. Heat coconut milk in a sauce pot, then add palm sugar, pandan leaves, cinammon and salt. Bring to the boil and simmer, stirring for 10 minutes.

Add bananas and simmer gently until the bananas are tender. Taste to see if extra sugar is required.

Turn down the heat and simmer to reduce the sauce until it becomes thick. Remove from the heat and cold it down. It can be serve with ice cream. Garnish with a sprinkle with jack fruit.
