073e Tofu with Palm Sugar & Tamarind Sauce (Tahu Gejrot )



12 pcs Tofu "Sumedang"

1 cup Vegetable oil

1 clove Garlic

1 tsp. Salt

2 tbs. Fried Shallots

50 ml Water


4 pcs Shallot

3 cloves Garlic

2 pcs Bird's eye chilies

1 tsp. Salt


2 tbs. Tamarin Sauce

100 grams Palm sugar

250 ml Water

4 tbs. Sweet soy sauce


Puree garlic and rock salt in a pestle and mortar. Add 50 ml of water. Soak the tofu into the garlic mixture for 15 minutes.

Deep-fry the tofu several at a time, turning over if necessary until golden (about 2 minutes). Cut each tofu into 3x3 cm bite size. Ready to serve with the sauce.

Boil palm sugar and water until dissolved. Filtered. Enter the spice paste into the palm sugar sauce, add tamarind juice and soy sauce. Cook until boiling.

Prepare the tofu in serving dish, pour the sauce and fried shallots.
