061e Raw Vegetables with Grated Coconut (Trancam Solo)

Ingredients

100 grams Long green beans sliced finely inti 2 mm strip

100 grams Bean sprouts

1 pcs Carrot sliced finely into strips

2 sheets White cabbage sliced finely into strips

20 pcs Balinese Basilicum leaves (Kemangi)

20 cm Cucumber seeded, cut in cubes 0,5 cm

1/2 pcs Fresh coconut grated

SPICE PASTE:

1 clove Garlic

1/2 pcs Red chillie

2 pcs Fragrant lime leaves sliced finely into strips

1 tbs. Palm sugar

2 pcs White ginger (kencur) lesser galangal

1 cm Galagal

1/2 tsp. Salt to taste Shrimp paste (optional) 1/4 tsp

Directions

Wash bean sprouts, pinching off any brown tails. Drain well. Cut the beans Diagonally and into 2mm-size lengths. Scrub carrots and cut into thin strips. Slice cabbage in long strips 2 mm wide, discard the center stem.

Blend garlic, white ginger, galangal, chili, shrimp past, palm sugar and fragrant lime leaf together in a mortar and pestle until they turn into a paste.Place freshly grated coconut into a bowl with the spice paste and salt.  Mix thoroughly together.

Sprinkle this grated coconut mixture over raw vegetables and mix it well, add Balinese Basilicum leaves (Kemangi). Put the mix vegetables onto a serving dish/platter.

Notes

To have special flavor: Add bunga kecombrang (bongkot), blunts and biji petai cina (lamtoto bean)
