048e Green Beans in a Sasame Dressing (Ingen No Gomae)



175 g Fresh green beans

1 pinch Salt

1 tbsp. Sesame seeds toasted

1 tbsp. Sugar

3 tbsp. Dashi stock

1/2 tbsp. Miiso paste

1 tbsp. Salty soy sauce


Boil the beans in a pan of water for 5 minutes or until tender, add the salt and stirring occasionally.

Drain immediately and rinse it under cold water.

Finely grind the sesame seeds in a pestle and mortar or in a coffee grinder. Add the sugar,

dashi, miso paste and soy sauce and mix together well.

Toss the green beans in the sesame dressing and serve as a side dish.


Dashi stock ( japanese fish stock) can be replaced with vegetable granular mix with warm water.
