026e Spicy Chicken Salad (Ayam Sambal Matah)



300 grams Chicken Breast

2 cloves Garlic chopped

1 tbs. Margarine

1 tsp. Salt to taste

1 pcs Jeruk limau lime cut in half, squeezed lime juice

2 tbs. Virgin Coconut Oil


7 pcs Shallots slice finely

5 cloves Garlic slice finely

1 pcs Red chili seeded, slice finely

5 pcs Birdseye chillies slice finely

3 stalk Lemon grass take white soft part in the middle, slice finely

1/4 tsp. Shrimp Paste optional

1 tbs. Fried shallots to garnish


Combine the shallots, chili, garlic, salt, shrimp paste (optional) and coconut virgin oil and mix it well. Put aside.

Mix the chopped garlic with margarine and salt. Rub the chicken with the garlic & margarine paste. Grill the chicken until golden brown. Set aside and allow to cool down, then shred the chicken. Place in a salad bowl. Add lemon grass and the fresh sambal (Sambal Matah) and mix well together. Pour the jeruk limau juice over the mixture. Garnish with fried shallots.


Can also use fried tuna instead of fried chicken.
