017e Green Papaya Salad (Salat Pepaya Mengkal)



1/4 pcs Green Papaya shredded

1 pcs Tomato sliced finely

5 pcs Long green bean cut 3 cm length, pounded

2 bunch Lettuce leaves pick the leaves,washed

1 pcs Carrot shredded


3 tbs. Lemon juice

1 tsp. Mustard

2 tbs. Honey

1 tbs. Olive oil

1/2 tsp. Salt & pepper to taste

1 pcs Paprica or red bell pepper thinly sliced into stripes

1 pcs Red chili seeded, thinly sliced into stripes

1 tsp. Fish sauce

4 pcs Shallot thinly sliced

1 tsp. Dried Shrimp soak in hot water


3 tbs. Peanut roasted, chopped

3 tbs. Coriander leaves trimmed


Drain the shrimp. Using a mortar and pestle, crush garlic and shrimp until smooth. Place the garlic mixture in a mixing bowl. Add lemon juice, honey, mustard, fish sauce, chili, shallot, salt, pepper and olive oil.

Place the shredded green papaya, green beans, tomatoes, red onions, red chili and sauce in a bowl and mix well. Sprinkle with nuts and stir again. Add nuts just before serving to keep them crunchy.

Add bell pepper, toss gently. Taste and if necessary add more honey, chilli or lemon juice. Put aside.

Serve on a bed of lettuce leaves, with garnish of your choice (i.e coriander leaves).
