008e Steamed Tune Fish in Banana Leaves Wraps (Gadon Ikan Tuna)



250 grams Tuna Fish , cut into bite size

1 Egg lightly beaten

125 ml Coconut milk

16 sheets Banana leaves cut in 12 cm wide

Spice Paste Ingredients:

2 Red chillies seeded, finely chopped

8 Bird's eye chillies

7 Small cloves shallots peeled and coarsely chopped

3 cloves Small cloves garlic peeled and coarsely chopped

3 Candlenuts coarsely chopped

1 Tomatoes cut into four, cut in 1 cm length

1 cm Galagal

1 tsp. Salt

1 tsp. Palm sugar or brown sugar

1 bunch Balinese Basilicum leaves (Kemangi) pick the leaves,washed


Blend garlic, shallots, galangal, red chillis, palm sugar and candle nut together in a mortar and pestle or food processor. Mix the blended ingredients with tuna, coconut milk, salt, egg, tomato, and basilicum leaves.

Divide the mixture among 8 parts. Prepare banana leaves 2 layer on top of each other. Place one part of tuna fish mixture in the middle of banana leaves and put a small hot chili on top. Seal each packet with toothspick.

Steam the banana pakets for about 25 minutes until the fish is cooked and the liquid has evaporated.
